This is my "go to" recipe for grilled chicken that I use in a variety of recipes and it is a family favorite, mine especially, because of how quick and tasty it is.

Skillet Grilled Chicken

If you don't already own a cast iron skillet you need to get one. They are the best for even heating and holding their heat.

I cook in mine everyday for one meal or another.

So today I was on Pinterest , again, looking up recipes to use in my new "smaller" crock pot when I remembered that my awesome nail lady Anh said while she and her boyfriend were checking out my blog they noticed there weren't a whole lot of Asian inspired recipes.

Pumpkin Crazy Cake

A while back I adapted the Chocolate Crazy Cake from Sweet Little Bluebird's blog into a Mocha Crazy Cake and while I was at it I decided because it's Fall I'd make a Pumpkin one too.

These are the easiest one dish cakes ever.  You can mix, bake, and serve all out of the same baking dish.

These are depression era cakes (when ingredients were scarce and they had to make do) so they are also completely dairy free (without the frosting that is) and perfect for those of you with egg or dairy allergies.

I don't know how or why but life sure seems a lot more hectic these days than when my kids were little.

Do you ever get the feeling like time just flies by without you noticing it?  I sure do. And more so lately then ever before.

I find myself in the kitchen around 3:30 frantically looking for something to cook for dinner because I forgot to defrost something in the morning.

I found the solution to my problem this past weekend and you'll definitely want to give it a try too.

This wasn't something I was very familiar with because I don't remember my mom making them growing up so in turn I never made them for my kids.

But the hubby was so excited when he saw the cans of Manwich sitting on the counter because he remembers having Sloppy Joes when he was growing up and he loves them.

Teriyaki Chicken Kabobs

Do you have a favorite thing to cook in the summer?

Mine is probably kabobs.  I love that the whole meal, except maybe some rice cause that'd be kinda hard to skewer, is on a stick.

I also love that I can get my kids to eat more veggies.  Veggies are fun to eat when they're on a stick.

And this recipe has got to be one of my absolute favorite kabob recipes yet!

Cheesy Chicken Flautas with Avocado Cream Dipping Sauce

I brought home a couple of rotisserie chickens last week and wanted to make some quick and easy dinners with them.

I wasn't sure what I was going to make when I bought them, but I have a ton of magazines laying around with recipes for meals that include rotisserie chicken.

The first one I made up all by myself :)  Even made a new dipping sauce to go with!

You all know how much I love my Mexican food and I was in the mood for some on this night.  But I didn't want to make the whole spread with rice, beans, and a main course.

Instead I settled for some finger food.

One of my favorite things to order is Flautas and so I thought I'd try my hand at making them at home.

And let me tell you, it was A-MAZ-ING!
