I have also always liked a variety so we usually have at least two different kinds on the table at the same time.
I have made homemade chips before but it had been a while and I wanted to make some to go with my Italian Beef Dip Sandwiches I made for dinner last week.
They were so easy to make and tasted so much better than store bought because they were fresh from the pot and piping hot. Betcha can't eat just one!
I used my homemade Grill Rub on half as sort of a BBQ flavor and the rest were salt, pepper, & onion flavored. Holy Yum Y'all!
Here's what you need:
2 large russet potatoes, scrubbed and sliced very thin on a mandolin
canola oil for frying
slotted spoon or spider
Place some paper towels or paper bags on a baking sheet and place a cooling rack on top of the paper bags. Set aside.
Scrub the potatoes then slice them using the thinnest slice on a mandolin. I used my pampered chef mandolin and used the hand guard when needed.
Place the sliced potatoes in a large bowl of ice water (as you slice them) for 30 minutes. Making sure all the potato slices are submerged in the water.
Pour off the ice water and place the potato slices in layers between paper or regular towels and pat dry.
Heat a pan with at least a few inches of canola oil to 375 degrees. I use a candy thermometer on my pan at all times to keep the temperature at the right heat.
When the oil is to temperature place about 10-12 slices of potato in the pan turning when they are brown. Making sure both sides are golden. This goes very fast so don't walk away once you start frying. I use my spider when frying for quick and easy scooping.
Remove from oil and place on cooling rack.
Immediately sprinkle with your favorite BBQ spice or salt, pepper, and onion powder. Then move them to the back of the cooling rack or a bowl so you are not re-seasoning them over and over.
I used two large potatoes and got a bowlful of BBQ and one of salt, pepper, & onion flavored.
These were AMAZING! and cheap and easy and delicious and everyone loved them and.....You get the point, right? Go try some for your family today!
