"What we eat for breakfast around here"

My kids and I Love, Love , Love breakfast burritos, the Hubs not so much, so I usually end up making some sort of meat/potato combo and the eggs separate so everyone gets their choice of how they would like to eat their's.
My friend Lupe introduced me to Spam and Potatoes Burritos years ago and they were a hit around here so I've been making them ever since. Now before you all go "EWWW" about the Spam, have you ever tried it?
I grew up eating Spam sandwiches and my kids love them too! Most of the peeps I've fed this to don't even know I'm using Spam unless I tell them. So you can make these the way I do or you can substitute the Spam for any other breakfast meat. I have used Kielbasa and it is yummy too.
Here's what you need:
2 large russet potatoes, skins on, 1-1/2" cubes
1 - 12 oz can Spam Lite
2 Tbs. canola oil
1 tsp. salt
1/2 tsp. pepper
4 - 6 - 10" flour tortillas
6 eggs, room temperature, beaten
3 Tbs. heavy cream
1/2 tsp. salt
1/8 tsp. pepper
Scrub and dry the potatoes really well, then cube into 1-1/2" pieces, set aside. Dice Spam into 1/2" - 1" pieces.
Remove lid and cook another 5 - 7 minutes depending on the crispiness you like. We LOVE crispy!
While the Spam and potatoes are cooking prepare the eggs. In a medium bowl beat the eggs with the cream, salt and pepper until well combined.
Heat a non stick pan with 1 tsp. oil and 1/2 tsp. butter on medium until hot. Add eggs and cook stirring gently until they are just cooked. Eggs can turn tough if you cook them on too high a heat or really scramble the heck out of them. So just remember, gently.
Using a rubber spatula use a folding motion by going around the outside and folding to the middle until set.
Heat the flour tortilla in the micro for 10 seconds, or in a dry pan flipping when one side is warm, or like I do it right over the flame of my gas burner, flipping after about 5-7 seconds. Watch it closely though they can scorch easily. AND USE TONGS!
Next add all the yummy stuff you like. Cheese, ketchup and or hot sauce.
Now on to the rolling. When you heated the tortilla you made it pliable so it should roll pretty easy. Fold in both sides and then fold the end closest to you up and over the filling, making sure the filling is going right to left.
Then gently pull towards you with the closed flap and roll forward until it is completely closed.
Sounds WAY harder than it is. You can also only close one end "the bottom" and leave one open to start at that end. This gives you more room in the burrito.
** Great on the go breakfast. Make the night before, wrap in tin foil and store in the fridge. In the morning on your way out the door, remove the tin foil wrap in a paper towel and micro for 1 - 2 minutes. Voila! Hot breakfast burrito. Great for kids on the way to school too.
