Chunky Chicken Salad or Sandwich

This recipe is adapted from a recipe I got from my sister-in-law Stacy years ago.  She used to make those little chicken salad sandwiches made with one of those sandwich crimpers.  I liked the original recipe but I like a lot more crunchiness in my sandwiches.  So over the years I have added several ingredients and you too may add or change the ingredients to suit your tastes.

Here's what you need:

2 - 12.5 oz cans all white meat chicken breast
1/2 cup mayonnaise (Best Foods or Hellmann's ONLY  none of that sandwich spread stuff)
2 green onion, finely sliced
1 celery stalk, finely diced
1 tsp. salt
1/2 tsp. pepper
1/4 - 1/3 Fuji apple diced, or any other brand you like
1/4 - 1/3 cup Craisens, optional
1/4 - 1/3 cup cashews, chopped, optional (If using nuts, don't add until right before serving or they will get soft)
6 leaves Romaine lettuce

For sandwiches use
2 slices favorite bread, toasted is best
1 slice of favorite cheese, we like Swiss

For salad
Add about 1/2 - 3/4 cup chicken salad to a bowl of green salad and enjoy!

Drain the chicken really well and place in a medium bowl.  Add the mayo and mix well.
 
 Add the onions, celery and apple and mix well.  Serve as a salad or Toast bread and serve as a sandwich

I used those new sandwich thins to make my sandwich today and toasted it first.  It was Super Yummy and I saved calories on the bread!
