Spinach Salad with Poppy Seed Dressing

I got this recipe from my friend Traci Adams a few years ago and have been making it ever since.  If you are looking for a wonderful Spinach salad this is your recipe.

Here's what you need:

8 oz. spinach leaves, stemmed and  torn or cut into pieces
1/2 Fuji apple, diced with skin on
red onion slices, very thin -  I use my mandolin for slicing
1/4 - 1/2 cup Craisens
1 avocado, diced
6 strips crispy cooked bacon, chopped
1/4 cup freshly shredded or shaved Parmesan cheese, I use my vegetable peeler to shave the Parmesan
any other additions you want to make

Dressing
1 cup canola or vegetable oil
1 Tbs. minced red onion
1 tsp. dry mustard
1/2 cup sugar
1/3 cup red wine vinegar
2 tsp. poppy seeds

Wash and spin dry the spinach then de-stem and cut or tear into pieces.  Place spinach in a large serving bowl and add the rest of the ingredients.  Mix all the dressing ingredients in a bowl or salad jar.  Place the salad and dressing; separately, in the fridge and right before serving dress the salad.
 
Dress and serve immediately.

Serves 6
