Ice Cream Sandwiches

Do you eat ice cream in the winter?

We do and it's just as delicious and refreshing as in the summer.

I decided to try a new way to eat my ice cream.  Well, not technically new to the world, but definitely new to my kitchen.

I made a few different kinds with different cookies and they were all amazing. 

I'm sure you'll have a favorite too.

Here's what you need:

1 recipe of my Jumbo Peanut Butter cookies, baked and cooled, or any large cookie
several flavors of ice cream
sprinkles, jimmies, crushed cookies, or crushed pretzels
plastic wrap

Set ice cream out on counter 20 - 30 minutes before assembling to soften a little.
Find two cookies that are about the same size and shape.
Lay the bottom one face down and fill it with ice cream until it is about 1 inch thick the more the better :)
Place the top cookie on top and press lightly
together until the ice cream is at the edges of the cookies.  It is best to use crispy cookies for making these.
 
You can roll the edges in sprinkles, jimmies, crushed cookies, or crushed pretzels to add texture and flavor.
Wrap tightly in plastic wrap and place in the freezer for at least 4 hours to harden the ice cream OR eat immediately.
