Jumbo Peanut Butter Cookies

Have you ever seen such a giant cookie?  Lol

These are my hubby's favorite cookies ever!

Not only are they a delicious peanut butter cookie, they are the size of a small frisbee! haha

I made these to use in my Ice Cream Sandwiches and realize that I used the same recipe as my Chewy Peanut Butter Cookies but I figure why not have the recipe with the exact directions for making the jumbo size too.

You can use these in my Ice Cream Sandwiches or just eat them as they are.  Either way they are deeeeelicious.

Here's what you need:

1/2 cup butter, at room temperature
1/2 cup Crisco, butter flavored
1 cup Jif Peanut Butter
1 cup brown sugar
1 cup sugar
2 eggs, at room temperature
2-1/2 cups flour
1 tsp. baking soda
1/2 cup sugar for rolling the cooking in

Preheat oven to 375 degrees and line a baking sheet with parchment paper and set aside.

Put 1/2 cup sugar in a bowl and set aside.

In the bowl of a stand mixer cream the butter and sugars until smooth.
Add the peanut butter and mix well.

Add the eggs and mix well.

Add the flour mixed with the baking soda and mix until combined.
Using the Pampered chef large scoop (this is one size down from a commercial ice cream scoop and is approximately 3 Tablespoons) drop into in bowl of sugar and roll to coat completely then place on the parchment lined baking sheet about 3 inches apart and press slightly with fingers to flatten a tiny bit.

Bake for 14 minutes or until golden brown and slightly crispy.

They are literally the size of small Frisbee!

Enjoy warm or cool completely and follow my Ice Cream Sandwich recipe to make a special treat out of these delicious cookies.

 Enjoy!
