Homemade Applesauce

Do you ever get stuck in a rut on a specific ingredient and you just think it's the best? Don't want to try anything new?  Well let me tell you I learned my lesson with a new applesauce recipe the other day.
I'm was firm believer in Granny Smith apples for all my apple pies and thought they were the best for my applesauce too.

Then I can across this recipe over at Atkinson Drive and it looked so delicious that I just had to try it.  Guess what?  I used a new kind of apple in my recipe and it was DELICIOUS!  More sweet and appley flavored then ever before. I will forever make my applesauce using this recipe.  Thanks Sam :)

Here's what you need:
8-10 apples (I used 6 Fuji and 3 Gala) I think a mix of apples you normally eat is perfect.
1/2 - 3/4 cup sugar, depending on the sweetness of your apples
1 cup water
1/2 - 1 tsp. cinnamon (optional)

Wash and peel the apples then cube and place them in a large stockpot.
Add the sugar and water and give it a good stir.
Cover and simmer for 25-45 minutes depending on how high you are simmering and how large your cubes of apples are.  Mine took about a total of 40 minutes.
Give it a good mashing with a potato masher, or as you can see mine was in the wash and I used a whisk.  It worked fine, just took a little longer.

If you are omitting the cinnamon, cool completely then store in the fridge until ready to use.

If you are adding the cinnamon add 1/2 - 1 tsp. (or more) stirring until fully incorporated and desired flavor is achieved.  Cook an additional 5 minutes to dissolve the cinnamon completely.

Cool completely and store in the fridge until ready to use.
Mmmmm, the best applesauce ever.

Enjoy!
Serves - 6-8 depending on the size of your apples

I guess that means I'll just make it for fun :)
