Blueberry Mug Cake (or Muffin)

I keep going back and forth with myself whether or not to call this a cake or a muffin.

Technically it has all the same ingredients as a muffin but so do cakes.   And cake sounds better, right?

But then again, I usually make this for breakfast not dessert. hmmmmm......

Whatever you decide to call this, just make sure you try it!

It is delicious for a breakfast on the go (I've definitely done this) or a mid afternoon snack (guilty) and after dinner as a light dessert (hand is up)

Here's what you need:

6 Tbs. flour
2-1/2 Tbs. sugar
1/2 tsp. baking powder
1 Tbs. oil, canola or vegetable
4 Tbs. milk
1/2 tsp. vanilla
20 or so fresh blueberries

Topping
1 tsp. sugar

In a microwaveable mug mix all ingredients except the blueberries until completely combined.
 
Add blueberries and mix gently to combine.
 
Sprinkle sugar on top and microwave 90 seconds.  This time may vary as all microwaves don't cook the same.
 
Cool for a minute or two (if you can wait that long) and then dig in!  Mmmm mmmm
