Coffeehouse Blueberry Scones

Here is the second delicious scone recipe I made last week.  I'm calling them Coffeehouse Blueberry Scones because they remind me of the ones I had at Starbucks when I was in Disneyland. Mmmm mmmm.

Scones are a great treat for breakfast, snack, or even after school.  These are like a light and moist biscuit only better.

I've been using these dehydrated blueberries I found at Costco in all my blue berry recipes lately because that pack so much more flavor into these little guys than a whole passel of fresh blueberries.

But if you can, do buy them at Costco because they cost a fortune everywhere else. Especially at the rate I've been using them, lol.


Here's what you need:

2-1/2 cups flour, all purpose, unbleached, more may be added it too sticky
1/3 rounded cup sugar
1/2 cup butter, cold, cubed
1 Tbs. baking powder
1/2 tsp. salt
1 egg, at room temperature, beaten
3/4 cup cream (more may be added by the tablespoon if needed)
1/2 cup dried blueberries

2 Tbs. cream for brushing on top before baking
large sugar crystals for sprinkling


Preheat oven to 425 degrees.  Line a baking sheet with parchment and set aside.

In a bowl mix the flour, sugar, baking powder, and salt.
Add butter and using a pastry blender cut in until it is the size of peas.
Make a well in the center and pour in the egg and buttermilk mixture.
Gently stir together with a fork until it just comes together.  If needed add more cream by the tablespoon until it all the flour is moistened.
Add the blueberries and mix gently to combine.
 
Pour out onto a piece of parchment and pat into a circle about 1 inch thick.
 
Using a bench scraper or knife cut into 8 wedges and place on a parchment lined baking sheet.
 
Brush with cream and sprinkle with sugar crystals.  Bake for 20 minutes or until golden brown and done.
Server warm or at room temperature with your favorite beverage of choice.
