Chocolate Pudding

Have you ever had homemade chocolate pudding?

And I don't mean from the box but actually from scratch, pudding?

This has got to be one of the easiest but most rewarding desserts out there.

It was super simple to make, once I got the ratios correct, and is creamer and richer than any box mix around.

Do you have a few extra minutes in your day?  It only takes about 15 minutes then in the fridge to chill. What could be simpler?

You need to try this for your family too they will thank you in smiles and kisses :)

Here's what you need:

3 cups milk, I used whole milk
1 cup sugar
1/3 cup cornstarch
4 large eggs, at room temperature and well beaten
1/3 cup butter, at room temperature
1/2 tsp. vanilla extract
1/4 tsp. salt
1 cup milk chocolate chips


In a bowl mix the sugar, salt, and cornstarch and set aside.

In a large sauce pan place the milk, beaten eggs, and vanilla.  Add the sugar mixture and whisk until completely combined.
 
Heat over medium heat until boiling.  Boil for 1 minute until thickened.
Remove from heat and add the milk chocolate chips and butter.  Whisk until completely combined and smooth.
 
Pour into pudding cups, glasses, or small bowls.  Place a piece of plastic wrap directly on the pudding in each dish to keep a skin from forming.
 
Refrigerate for at least 3 hours or until completely cold and set up.
Top with fresh whipped cream and serve with a smile :)
