Shredded Beef Tortilla Stacks

You guys have totally got to try this!

You guys are going to ab-so-freaking-lutely LOVE this new creation I've come up with!

Unless of course you come from planet "I don't like Mexican food" in which case you can turn around and go out the way you came in ;)

I made some Authentic Mexican Shredded Beef a couple of weeks ago and came up with several new recipes to use it in.  This one is by far my favorite and if you like Mexican food like I do, you are going to LOOOVE this one!

It's super easy and can even be part of a cook once and eat twice meal plan because you can use any size roast to make your shredded beef with and just keep the leftovers in the fridge until needed (up to 1 week).

Here's what you need:

1 recipe for Authentic Mexican Shredded Beef
6" corn tortillas or flour tortillas 3 per person (adults)
canola oil for frying tortillas
1 can refried beans warmed up with 3 Tbs. Taco Bell mild hot sauce added or 1/2 a packet of taco seasoning
shredded lettuce
shredded cheddar or Monterey Jack cheese or a blend
Pico de Gallo
Guacamole
lime wedges
sour cream

Prepare the Authentic Mexican Shredded Beef according to the directions.
 
Heat enough oil in a skillet (about 1 inch deep) on medium high and fry tortillas for a couple of minutes on each side until desired crispiness. 
 
To make the stack start with a fried tortilla and smear it with some of the flavored beans and a sprinkle of cheese.
 
Add another tortilla and repeat the bean and cheese layer and add a spoonful of the meat mixture.
 
Top with more cheese, another tortilla, beans, and meat.
Finish with a sprinkle of cheese, lettuce, Pico de Gallo, and Guacamole.
 

 
You can also add sour cream and more cheese if you like.  Hot sauce and a squeeze of lime would be great too.
You have now created the world's most amazing tortilla stack so dig in!
