I could eat this stuff on just about everything. It's great on eggs, breakfast casseroles, sandwiches, tacos, burritos, chips! Should I really go on or do you get the picture? I think you do.
Guacamole is so easy to make and everyone has their favorite additions so you can always add or remove what you like or don't like. This is my favorite way of making guacamole.
Here's what you need:
2-3 large ripe avocados, peeled and seeded, I use California Hass avocados
2-3 Tbs. minced sweet white or yellow onion
2 Tbs. cilantro, chopped
1/2 jalapeno, minced depending on how hot you like it
1-2 garlic cloves, grated on a microplane
juice of 1 large lime
salt to taste
2 heaping Tbs. Pico de Gallo
Remembering that guacamole is a personal taste preference, start out with the lowest quantity of ingredients and add as you go by tasting until it is right for your palate.
Place all ingredients, except the Pico de Gallo, in a bowl and mash with a fork until the guacamole is the right consistency for you and your family. I like mine a little on the chunky side so I leave some of the avocados in big chunks.
Add the pico de gallo and mix gently until incorporated.
Serve with any type of food or chip and salsa.
Tada! And you thought homemade guacamole was hard, but it's really pretty simple :)
