Tropical Pineapple Coconut Bars

Do you like all things tropical?  I sure do, especially the whole pineapple coconut combination.

It might very well be my favorite combination so far!

Today's recipe is one I have been making for probably more than 10 years.

These bars are one my Mother-in-law found in some cookbook in my kitchen years ago and made them because as she always says "I grew up having dessert after every meal", lol, and she does love her baked goods.

I will apologize in advance to the cookbook [owner] they were found in because I can't really remember who's they are, lol.  I collected those Pillsbury ones they keep by the check stand in the grocery store for YEARS so that's most likely where this recipe came from.

Lately I've been paring down my blog posts to how I feel about the recipe or the food involved; usually because there isn't a story behind every recipe.  But please let me know if you'd like me to talk longer because I am known to be a little long winded, HA! (Now I'll know who's actually reading this by the number of comments I get, lol)

I feel bad when I go to blogs and I'm on the hunt for a recipe and don't take (or have) the time to read the WHOLE story behind each and every one of the recipes so I'm just saving you all the guilt of doing that here, lol.  You're welcome!

Here's what you need:

Base
1 box yellow cake mix
1-1/2 cups oatmeal
1/2 cup butter, cold and cubed
1 egg, beaten

Filling
1/2 cup flour
1 can sweetened condensed milk
8 oz. crushed pineapple, well drained (juice reserved)
1/2 tsp. nutmeg

Topping
1 cup macadamia nuts, chopped
1 cup coconut
1 cup vanilla baking chips

Glaze
1 cup powdered sugar
4-6 tsp. reserved pineapple juice

Preheat oven to 350 degrees.  Spray a 9 x 13 with baking spray and set aside.

In the bowl of a stand mixer place the cake mix, oatmeal, cubed butter, and beaten egg.  Mix until it is crumbly.
 
Set aside 1-1/2 cups of mixture and pour the rest into the prepared 9 x 13 baking dish.
 
Press the mixture into the bottom of the 9 x 13 evenly.
In the same mixing bowl (no need to dirty more dishes) place the filling ingredients and mix until combined then pour over the base.
 
Place the coconut, nuts, and vanilla baking chips in the bowl with the reserved 1-1/2 cups cake mixture and mix with a fork until combined.  Pour the mixture evenly over the filling.
Bake for 35 - 40 minutes or until golden brown.  Cool Completely.
While bars are cooling make the glaze by placing the powder sugar and a couple of teaspoons of the reserved pineapple juice in a bowl and mixing.  Add pineapple juice 1 teaspoon at a time until the desired consistency is achieved.
 
Glaze bars then wait at least 1/2 hour before cutting for the glaze to set up.
 
These are so yummy and everyone needs to make some today!
