Pesto di Basilico

Pesto di Basilico ~ the Italian pronunciation.

Basil Pesto ~ the boring American pronunciation, lol

No matter how you say it, Pesto is one of my very favorite pasta toppings and so easy to make at home.

All you need are the ingredients and a blender or food processor.

I don't know why more people don't make pesto at home, it's so easy and so fresh.

You can even store it in the fridge for a few weeks as long as you cover the top with olive oil to keep it from turning brown and store it in an airtight container.


Here's what you need:

4 cups basil leaves, washed and stemmed
1/2 cup Parmesan
1/2 cup pine nuts
2 garlic cloves
1/2 tsp. salt
a few grinds of the pepper mill
3/4 cup olive oil

Place all ingredients, except the oil, in a blender or food processor and mix until chopped.
 
 Drizzle the olive oil in the blender until the right consistency.
You may store the pesto in the fridge in a glass jar with a lid  or an airtight container and cover the pesto with a thin layer of olive oil to keep it fresh and bright green. When ready to use just stir the oil into the pesto.
Makes about 1-1/2 - 2 cups

Enjoy with pizza, pasta, sandwiches, etc... The possibilities are endless.
