Mocha Toffee Ice Cream

A month or so ago I held a summer dessert/frozen treats party on my Facebook page.

Everyone brought delicious looking recipes to try but the one that stuck out the most was Coffee Toffee Ice Cream from Debi over at Life Currents.

I don't know if you know this or not but I'm kind of a coffee lover (shhhh) and I have always loved any type of coffee flavored ice cream so this was definitely going to be made in my kitchen!

I changed the recipe to suit my ice cream maker but I'm sure it tasted just like Debi's :)

The great thing about her recipe is there is no ice cream maker needed, but as I do have one I like to use it as often as possible.

So whichever recipe you decide to try, I'm sure you'll be happy with the chocolaty crunchy, coffee flavored treat!

Here's what you need:

2 cups whipping cream
1-1/2 cups half & half
1 cup sugar
1/2 cup cold coffee, strongly brewed
1 tsp. vanilla
1 - 8 oz. bag of English Toffee pieces
ice cream maker; I use a Cuisinart

In a large measuring cup or medium bowl mix the cream, half & half, & the sugar until the sugar is completely dissolved.  Pour mixture into the cold bowl of an ice cream maker.
 
Add the coffee and vanilla and stir to combine.
 
Turn on the machine and run as directed by manufacturer.  About 20 - 25 minutes.
 
After the ice cream starts to resemble soft serve add the English Toffee pieces.
 
Mix a few more minutes until incorporated.
 
Place in a freezer safe container and cover.  Chill for at least 3 hours before serving.
Serves 2 Quarts
