Salisbury Steak

Do you remember TV dinners?  I'm of the age that I've heard of them from years gone by.  But growing up I was lucky enough to have a Mom who was a wonderful cook and made EVERYTHING from scratch. 

I've tried to copy Mom's cooking ethics and I do make most of my meals from scratch.  And I can tell you there is a huge difference in taste and the nutrition you and your family get in each homemade meal.

I tried something new the other night and it reminded me of the old TV dinner commercials (hence the mention of them).

I was in the mood for some comfort food and thought I would try my hand at Salsbury Steak, mashed potatoes, and corn.   Mmmmm, boy did it turn out yummy! Nothing like a delicious beef patties covered in beef onion gravy sitting on a bed of creamy mashed potatoes.  Are you drooling yet?  I am and I already ate this :)

Here's the recipe I came up with.  I think you're family will love it just as much and mine did!

Here's what you need:
Steak Patties:
1-1/2 pounds ground beef (I use an 80/20 ratio)
1/3 cup bread crumbs (fresh are best, but store bought work fine)
1 egg
1 Tbs. Worcestershire sauce
1 tsp. salt
1/4 - 1/2 tsp. pepper
1 envelope onion soup mix

For the Gravy
1-2 Tbs. canola oil
1 large yellow onion, finely sliced
3 Tbs. flour
1 - 14.5 oz. can beef broth
salt & pepper

In a bowl gently mix all the ingredients for the steak patties and form them into oblong patties ( makes 4 )

Heat a cast iron skillet (everyone should really have one!) or a heavy bottom pan on medium high.  Drizzle a couple of teaspoons of oil in the bottom and when hot add the patties and sear on both sides about 3-4 minutes.  (sorry forgot to take the picture after I turned them, but you know what seared is, right?  Nice and brown with crispy bits)
After the patties have cooked about 8 minutes remove them to a plate and add 1 tablespoon of oil, if needed) to the pan and all the sliced onions.  
Sprinkle with a pinch (1/2 tsp or so) of salt and pepper and stir. 
Continue cooking until the onions are caramelized, about 12 - 15 minutes.
Add the flour, stir and cook 2 minutes to cook out the flour taste.
Add the beef broth and stir until completely incorporated.  Cook until slightly thickened, about 2 minutes.
 
Add the beef patties back into the gravy and turn to coat.  Cover with a lid and cook on low for 15 minutes.
Serve this delicious Salisbury Steak with mashed potatoes and peas or corn.  YUM!
