Well I told you I was going to start sharing all my Fall stuff with you, right?  I personally think Snickerdoodles are kind of a Fall recipe (nod your head) because of the wonderful cinnamon sugar coating, right?

ACTUALLY, I used to make them a lot more when the kids were little because Jessica loved them.  I now seem to make them only during the Fall and Winter.  Oh well, they're good any time of the year, especially if you make oodles and oodles of Snickerdoodles, sorry couldn't help myself :)

Here's what you need:
1 cup butter
1-1/3 cup sugar
2 eggs
1-1/2 tsp. vanilla extract
3 cups flour, all-purpose
2 tsp. cream of tartar
1 tsp. baking soda
1/4 tsp. salt

For rolling the cookies in
1/4 cup sugar
1 tsp. cinnamon

Pre heat oven to 375 degrees.  Line a baking sheet with parchment and set aside.

In a medium bowl stir together the flour, cream of tartar, baking soda, and salt and set aside.
In the bowl of a stand mixer cream the butter and sugar until light and fluffy, about 3 minutes.
 Add the eggs and vanilla extract and mix until smooth, scraping down the sides of the bowl as you go.
Add the flour mixture and mix until incorporated.  The dough will be VERY soft.
In a small bowl mix the sugar and cinnamon to roll the cookie dough in.
Using a medium scoop drop the cookie dough into the cinnamon sugar and roll to coat completely.  Place on parchment lined baking sheet.
Bake for 8 - 10 minutes.  Remove from oven and let rest on baking sheet a minute or two then remove to cooling rack.
Enjoy with a tall glass of milk!  Mmmmmm
