Last week at my Creative Thursday Link Party Melissa from Loving this crazy life posted this recipe which I slightly adapted and made for Monkey. Hi Melissa! You guys should really check out her blog, it's wonderful.
I was very pleasantly surprised that these cookies taste just like regular chocolate chip cookies. Didja get that? THEY TASTE JUST LIKE REGULAR CHOCOLATE CHIP COOKIES. They are soft and delicious just like any other cookie I make. So if you know someone allergic to eggs, or just want to try something new, here is the perfect recipe for you to make.
Here's what you need:
2-1/4 cup flour, all-purpose
1/2 tsp. baking soda
1/2 tsp. kosher salt
6 oz. cream cheese, at room temperature
3/4 cup butter, unsalted, at room temperature
1 cup brown sugar, packed
1/2 cup sugar
2 tsp. vanilla extract
1-1/2 cups milk chocolate chips
In a bowl mix the flour, baking soda and salt and set aside.
In the bowl of a stand mixer, or a medium bowl, mix the butter and cream cheese until light and fluffy, about 2 minutes on medium.
Add the sugar and brown sugar and mix until incorporated.
Add the vanilla and mix until fully incorporated.
Add the flour mixture and mix until completely incorporated.
Add the milk chocolate chips and fold in by hand.
Cover with plastic and place in the refrigerator for at least 30 minutes before cooking.
Preheat oven to 350 degrees and line a baking sheet with parchment.
Using a cookie scoop, I use the Pampered Chef medium scoop, place walnut sized dollops of cookie dough on the parchment lined baking sheet and bake for 12 - 15 minutes. These cookies don't seem to brown as much on the top as cookies with eggs so just keep an eye on them.
When done baking leave on baking sheet for 2 - 3 minutes then remove to cooling rack or paper towels to cool completely.
And here you have it, Eggless Chocolate Chip Cookies! They are soft and chewy and you won't even miss the eggs.
Serves 3 dozen approximately

DeleteI'm making your cookies tonight, I just made the batter and my 4 and 2 year old could not stop eating it (no egg no worry):) the batter is delish!!! I was eating so much I had to put it in the frig to stop.I had to alter the recipe a little because not only do I not have eggs I had no brown sugar, and no real butter just country crock I will let you know how they came out ...Thanks Michelle. :)
