I was supposed to bring this recipe on Superbowl Sunday to my friend Kathy's house but I forgot it at home. Lucky us because I made it on Monday for dinner and it was Delicious! Sorry Kathy, I'll bring it next time.
Don't you just love when you have something in the Crock Pot and you don't have to wonder what you're making for dinner? I do! Well, in staying with my New Year's Resolution to try more recipes in some of the millions of cookbooks I own, I tried one from this cookbook which is still available at Amazon. I'll be trying many more too.
Here's what you need:
1 - 28 - 32 oz package of frozen meatballs
1-1/2 cups ketchup
1 cup maple syrup or maple flavored syrup
1/3 cup reduced sodium soy sauce
1 Tbl. quick cooking tapioca
1-1/2 tsp. ground allspice
1 tsp. dry mustard
1 - 20 oz. can pineapple chunks in juice, drained
Combine the ketchup, maple syrup, soy sauce, tapioca, allspice, and mustard in the crock pot insert and stir to combine.
Carefully stir the meatballs and pineapple into the ketchup mixture.
Cover and cook on LOW for 5 - 6 hours. Stir before serving.
Serve over cooked rice. Nom, Nom, Nom

I used to use my crock-pot often, but for whatever reason started neglecting it. I've been trying to get back to using it and this recipe sounds so delicious.
