Fancy Coconut Layer Cake

This Fancy Coconut Layer Cake is one of the most delicious cakes ever!

It is a super simple recipe and so flavorful you'll impress everyone who tries a slice.

I made this for myself (yes I said myself) for my birthday this year because I LOVE coconut and homemade is so much more delicious than store bought.

I'm sure most people know someone who's mom, aunt, or grandma of so and so used to make one of these, lol that's usually how these recipes are passed around, but I'm the first in my family to make one (that I know of).

So for your next get together or family function, bring along this cake and everyone will be wow'd.

Here's what you need:

1 vanilla cake mix, I use Betty Crocker
3 large eggs, at room temperature
1/2 cup coconut oil, melted
1 can sweetened condensed milk
1 tsp. coconut extra
1/2 cup coconut milk, I use Trader Joe's brand
1 cup coconut

1 recipe for No Fail Buttercream Frosting
1 package sweetened coconut


Preheat oven to 350 degrees and line two or three 8 or 9 inch cake pans with a piece of parchment and spray with cooking spray.  You can use as many pans as the layers of cake you want.  I have made this in 2 layer and 3 layer, and 2 layer is easier to work with.
 
I'm showing both 2 layer and 3 layer so you know what they look like going together.

Place all ingredients except coconut into the bowl of a stand mixer and mix on medium for 2 minutes until fluffy and smooth.
 
Add 1 cup of coconut and mix with a spatula until incorporated.
 
Divide evenly into the pans.
 
Bake for 18-30 minutes depending on size of pans and how many you use.  Cakes are done when a toothpick inserted into the center comes out clean.  Do not over bake.
Cool in pan 5 minutes then turn the cake into your hand and remove the parchment then move to a cooling rack.
 
While the cake is cooling completely make the frosting.

Cream the butter and cream cheese until smooth.
 
Add the powdered sugar and mix.  It will be crumbly until you add the vanilla and cream.

 
Add the vanilla and cream and mix until smooth adding more cream until you have the consistency you want.
 

Place a small dollop of frosting on the cake plate or stand you are using and spread it out a little.  This is to help hold the cake in place.
Place the first layer of cake on the plate and place a large scoop of frosting in the middle and using an offset spatula spread evenly to the edges.
 
Add the second layer and repeat the frosting layer.
 
If you are making a 2 layer stop here and wait.  If you are making a 3 layer place the next layer on the second and repeat the frosting layer and start down the sides (2 layer cakes can start down the sides too)

Finish frosting around the sides pushing into the space between layers.
 
As you can see my cake is a little bit lopsided.  If you want a perfectly flat cake you can shave off the top to make it flat with a serrated knife.

Cupping your hand, fill it with coconut and press it lightly into the sides and top of the cake, adding as much or as little as you want.
 
Take lots of pictures of your pretty cake then slice yourself a big slice.
 
Hoooooly Mooooly this is the most scrumptious cake ever!
