Granola is one of those foods that has taken me several years to really come to love.
I used to think it was only for "Health nuts" lol but I actually really, really love it too and even though I'm not a health nut it is one of the healthier things I love to make and eat.
And I LOVE my Cranberry Nut Granola but am also always looking for new and exciting recipes to try for new flavors.
I also have a slight (wink, wink) addiction to cookbooks.
I have bought both of MOMables founder Laura Fuentes's cookbooks here on Amazon and can't wait to try all the recipes.
Her Pantry Granola caught my eye immediately while I was literally flipping through The Best Homemade Kids' Snacks on the Planet to find something new to try. Must have been fate :)
So I made a large batch with my own twist on the recipe and it is A-MAZ-ING! It has the yummiest flavor and I can't wait to share the other recipe for what I used it in this week.
So if you're looking for a new snack or breakfast for the family, definitely give this Pantry Granola a try. You won't be disappointed.
Here's what you need:
6 cups oats, I use instant because that's what I keep on hand
3 cups mixture of nuts, I used pumpkin seeds, pecans, cashews, slivered almonds
3 bags - 2 oz. each of Trader Joe's roasted coconut chips
1/2 cup flaxseed meal
1 cup dried cranberries, but you can use any dried fruit you like
2/3 cup pure maple syrup
1/2 cup brown sugar
1/2 cup coconut oil, melted
3/4 tsp. salt
Preheat oven to 250 degrees.
In a large bowl place all the dry ingredients and mix well. Set aside.
In another bowl mix the maple syrup, melted coconut oil and brown sugar. Mix well.
Pour the maple syrup mixture over the dry mixture and mix until evenly coated, you might need your hands for this part.
Divide onto 2 large baking sheets, spreading evenly, and cook for 50 minutes, stirring ever 15 minutes until done.
Serves about 8-10 cups
