Chunky Monkey Pancakes

A couple of weeks ago I was on a pancake making spree.

These were the second pancake recipe I came up with.

I don't know what it is about adding extra ingredients to pancake batter that makes it taste so good but I've fallen in love with bananas in my pancakes.

I thought you guys would love the addition of the mini chocolate chips too.....  You're welcome!

I can't wait to try peanut butter and banana together.  Oooh or peanut butter and jelly.

The possibilities are endless and once you start thinking about all the yummy ingredients you won't be able to stop.

Thank goodness my family loves breakfast for dinner :)


Here's what you need:

1-1/2 cups self rising flour
1/2 tsp. salt
1/4 cup canola oil
3/4 cup mashed bananas
1 large egg, at room temperature
1 tsp. vanilla
1-1/4 cup buttermilk, room temperature
1/3 cup mini chocolate chips


In a medium bowl mix the buttermilk, egg, oil, bananas, and vanilla extract until completely combined.
 
Add the flour and salt and mix well. 
 
Add the miniature chocolate chips and mix well.
  
Heat a skillet on medium low to medium or 350 degrees if using an electric griddle. 

Using a 1/4 cup measuring cup or ladle pour the batter into 3-1/2 inch circles and cook until slightly dry on the edges (about 2-3 minutes) then flip.
Cook on the second side until they are pillowy soft to the touch about another 1-2 minutes.
The only thing left to do is stack em' up and do a face plant!

Serves 8 approximately depending on size
