Funfetti Mug Cake

I've been really into making individual meals lately so why not individual desserts too?!

I really like the concept of a microwavable mug cake for one.  Perfect for on the go, at the office, or if you're the only one with a sweet tooth, lol!

Sometimes everyone just wants something different for dessert.  This happens a lot at my house.

I love these mug cakes because you can adapt them however you like; fresh fruit, funfetti, chocolate chips, etc.

These would make a cute teacher or co-worker gift too.  Make in a mug for the person you're giving it to and they get to eat the goods and keep the mug. It's a win-win for everyone :)

These work in most sized mugs.  Just be SURE it is microwaveable whether it's pottery, glass, or plastic.  I actually went a got a few smaller (regular) sized mugs because most of mine are huge!

Here's what you need:

6 Tbs. vanilla cake mix
1 Tbs. oil, canola or vegetable
1 tsp. white vinegar
3 Tbs. milk
1/2 tsp. vanilla
2 tsp. sprinkles

Mix all ingredients except the sprinkles in the microwaveable mug you are going to use making sure to incorporate all the cake mix.
Add the sprinkles and mix well.

Microwave for 90 seconds.  All microwaves are different wattages so start with about 70 seconds and see if it is done.  Add more time if needed.  Mine took 90 seconds.
Cool a few minutes and top with whipped cream or ice cream and enjoy!

Enjoy!
