Toad in a Hole

Who remembers these?

I couldn't believe the other day when I asked my hubby about them, that he had never heard of them.

I don't remember my mom ever making these for breakfast but I do remember hearing about them.

I decided I wanted something quick but still filling for breakfast a few days ago so I thought why not?

If you are looking for that perfect "Hot" breakfast to send your loved ones off with in the mornings, this one  literally takes about 15 minutes (or less) from start to finish and is perfect for you.

Here's what you need:

1 slice of toast, I prefer the Oroweat Potato bread
1 extra large egg
circular cutter, biscuit cutter or glass, whatever you have on hand for cutting the circle out

Preheat a skillet and butter both sides of the bread then using a circular cutter cut out the very center of the bread.  This will be a little messy so use a plastic cutting board or plate but I found it was easier to butter the bread before cutting the center out.
When pan is hot place the bread in the pan with a dab of butter in the middle, and the center piece off to the side in the pan.
Crack the egg right in the center of the hole in the bread and cook for about 2 minutes or until almost all the way set (most of the whites are cooked).  Sprinkle with salt and pepper if desired.
Using a rubber spatula, flip the whole piece of bread with the egg over and cook for another 1-2 minutes or until the egg is cooked to your liking and the bread is all toasty.  Don't forget to flip the little round piece over to toast on the other side too.
Viola!  Hot breakfast ready in under 15 minutes.
