Sloppy Joe Cornbread Skillet

I don't know how or why but life sure seems a lot more hectic these days than when my kids were little.

Do you ever get the feeling like time just flies by without you noticing it?  I sure do. And more so lately then ever before.

I find myself in the kitchen around 3:30 frantically looking for something to cook for dinner because I forgot to defrost something in the morning.

I found the solution to my problem this past weekend and you'll definitely want to give it a try too.

Have you ever had Sloppy Joes?

This wasn't something I was very familiar with because I don't remember my mom making them growing up so in turn I never made them for my kids.

But the hubby was so excited when he saw the cans of Manwich sitting on the counter because he remembers having Sloppy Joes when he was growing up and he loves them.

I decided to make a quick and easy meal (because really, who doesn't love quick and easy) using the Manwich Bold Sloppy Joe sauce. This sauce is a sweet and tangy sauce which is free of artificial flavors and preservatives and contains a whole serving of vegetables (perfect for my non veggie eating hubby).

Manwich comes in three flavors to choose from; Original, Thick and Chunky, and Bold. I went for the Bold sauce because we like big flavor around here and it was delicious.

Manwich helps get dinner on the table in a flash and I'll definitely be adding this delicious sauce to my grocery list because the dinner possibilities are endless.


Here's what you need:
1-1/2 pounds ground beef
1 can Bold Manwich Sloppy Joe Sauce
1 cup buttermilk
1/2 cup butter, melted
3/4 cup sugar
2 large eggs, at room temperature
1/2 tsp. baking soda
1 cup cornmeal
1 cup flour
1/2 tsp. salt

Preheat oven to 350 degrees.

In a 12 inch cast iron skillet (or oven proof skillet) brown the ground beef.
 
Add the can of Sloppy Joe Sauce and stir to combine. Leave on low until the cornbread topping is put together.
 
While the meat is cooking prepare the cornbread topping.  

Mix the flour, cornmeal, baking soda, and salt in a medium bowl and set aside.
In a microwave safe bowl melt the butter. Add the sugar and mix until completely combined.
 
Add the eggs and mix well.  Next add the buttermilk and mix until completely combined.
 
Add the liquid ingredients to the dry and mix until well combined.
 
Pour the prepared cornbread mixture evenly over the meat mixture, spreading to the edges and place in the oven.
Bake for 25-27 minutes or until a toothpick inserted into the center comes out clean.
Serve with your favorite veggies and dig in!
The best part of tonight's dinner is that it was on the table (from start to finish) in less than 45 minutes and we got to eat a warm hearty meal with the help of Manwich ~ Perfect for those busy weeknights we all have running the kids here and there for practices and lessons.
