Vanilla Sugar Cookies
I have been making these cookies for years. This was a recipe I found when I was a teenager and have made small improvements to it over the years.
I used to make these Frosted Sugar Cookies all the time and decided I really like them with just large sugar crystals instead.
So I revamped the recipe again (not a thing wrong with the original!) and turned them into an addiction!
I have made at least 5 batches of these in the last couple of weeks and knew I had to share them with you.

Buttermilk Skillet Cornbread
While looking for a chili recipe the other day I came across this delicious looking recipe for a Simple Sweet Buttermilk Cornbread over at The Slow Roasted Italian's blog and knew I had to give it a try.
I've been looking for a great homemade cornbread recipe for years and never found one I really liked.
This is such a simple recipe that I adapted slightly to accommodate what I had on hand.
This cornbread is so delicious that I've made it about 4 times in the last two weeks, including Superbowl Sunday with their Wendy's copycat Chili and it was a total hit!

Wendy's Copycat Chili
Doesn't this potato just scream dinner to you?
I don't know about you but I will find any excuse to include potatoes in my daily consumption of food, including trying out new recipes.
I found this recipe over at The Slow Roasted Italian and knew I had to give it a try, especially after my Aunt already tried it and said it was fabulous.
I've never actually HAD Wendy's chili but I know this one is a winner even if I have nothing to compare it to.
This is a meal that can be cooked up in under an hour so it's perfect for weeknight meals.

Guacamole Burgers
I love a good homemade burger and I've been wanting to try out different flavors.
I figured with my love of Mexican food I couldn't go wrong with a burger with all the great flavors of Mexican food wrapped up in a soft bun.
In the past I have made Beef & Cheddar Sliders, Aloha Burgers, and Jack Daniels BBQ Bacon Burgers and while I consider all of these burgers amazing, I think my favorite so far are these Guacamole Burgers.
If you love Mexican food like I do, you'll love the combination of Mexican flavors and good old American Burger.

Berry Cheesy Crescents

Shredded Beef Tortilla Stacks

You guys have totally got to try this!
You guys are going to ab-so-freaking-lutely LOVE this new creation I've come up with!
Unless of course you come from planet "I don't like Mexican food" in which case you can turn around and go out the way you came in ;)
I made some Authentic Mexican Shredded Beef a couple of weeks ago and came up with several new recipes to use it in. This one is by far my favorite and if you like Mexican food like I do, you are going to LOOOVE this one!

Authentic Mexican Shredded Beef
We are split in our house on how to make authentic tacos and burritos.
My hubby likes ground beef (might just be a man thing) and I like shredded beef.
I personally think everyone needs a truly authentic Mexican Shredded Beef recipe in their repertoire and I've been wanting to make this for a long time.
So I finally made some a few weeks ago and oh my goodness was this the tastiest beef I've ever made.
It is perfect for tacos, tortilla stacks, burritos, etc. And it tasted just like the shredded beef at my favorite restaurant.

Guacamole
I truly believe there is nothing better than homemade guacamole!
I could eat this stuff on just about everything. It's great on eggs, breakfast casseroles, sandwiches, tacos, burritos, chips! Should I really go on or do you get the picture? I think you do.
Guacamole is so easy to make and everyone has their favorite additions so you can always add or remove what you like or don't like. This is my favorite way of making guacamole.
