Dark Chocolate Peanut Clusters

If you're looking for an easy but fancy treat to make this holiday season try these Dark Chocolate Peanut Clusters.

The are so easy to make and you can give them as hostess gifts wrapped in a cellophane bag or dressed up in a holiday mug and brighten your family and friend's day.

These would make great teacher and coworker gifts too.

Of course you can always make them for the reason I do.....Just to set on the table and nibble on throughout the day!

This recipe is easy to change up and make your own by adding coconut, marshmallows, etc. to the peanuts or changing them out for another type of nut altogether.

Here's what you need:

Double boiler (large stockpot with 1 -2 inches of water and a heat proof bowl that does NOT touch the water)
24 oz. of Dark Chocolate morsels
2 oz. German chocolate baking bar
16 oz. peanuts, either cocktail or honey roasted work well

Line a large baking sheet with parchment and set aside.

Heat water in the pot to a simmer.
Place all the chocolate in a heat proof bowl (I use a glass bowl) and set over the simmering water.
Stir until it is almost all the way melted.
 
When there are a few lumps left turn off the heat and the residual heat from the chocolate will continue to melt the rest.
Add the peanuts (and anything else you are adding.  But remember to keep it to the same volume as the 16 ounces of nuts) and stir until completely coated.
 
Using the smallest or medium scoop (I use Pampered Chef) or a tablespoon place the mounds of candy 1/2 - 1 inch apart so that it is not touching.
 
Set out of reach of pets and children and allow to set up (harden) for about an hour or two. 
 
Serve or give as gifts however you desire.  Store in an airtight container.
