Classic Apple Pie Re-Do

I have a confession to make.....

I have totally changed my way of thinking on Apple Pie and what kind of apples you need to use to make a great one!  Yikes!  I know.

For years you've probably read about my preaching on how Granny Smith are the be all end all apples for apple pie, but the truth is there are all kinds of great apples for baking and I just never knew this until recently.

I always used my mom's recipe for apple pie until about a year ago.

I had found a really good recipe for apple sauce that used red apples instead of the Granny Smith ones I had always used and I fell in love.  I went on to try many different types of red apples in my apple sauce and thought why not in my pie too!

I actually like a mix of red and green apples in my pie so this is the recipe re-do for my delicious Apple Pie and I find that because the red apples are a lot sweeter I don't need as much sugar in my pies♥.

Here's what you need:

4 - 5  large Fuji apples, peeled and sliced thinly
2 large Granny Smith (or two more Fuji's) peeled and sliced thinly
1/2 - 3/4 cup sugar, depending on how sweet your apple are (try them)
1 tsp. cinnamon
1/2 tsp. nutmeg
1-1/2 Tbs. flour
1 Tbs. butter
1 recipe for my No Fail Pie Crust or a store bought 2 crust pie crust

Pre heat oven to 375 degrees.

Make the pie crust according to the directions and place the bottom crust in the pie dish.  Set aside.
 
Peel and slice the apples and place in a medium bowl with room for stirring.  Add the sugar, cinnamon, nutmeg, and flour to the apples and stir until well coated.
 
Add the apples to the pie dish and add the butter in little cut up pieces.
 
Add the top pie crust and crimp the edges in a design you like.  I use a fluted edge for my pies.
 
Make sure to prick the top crust with a fork several times to let the steam out while cooking.
Bake for 60 - 75 minutes or until a fork inserted in the very center gives way to soft apples.
Slice and serve warm with ice cream or fresh whipped cream.
So the lesson to be learned is you're never too old to try something a new way and with different ingredients! I love the taste of my New Apple Pie ♥ and you will too.
