Sweet & Spicy Potato Salad

Years ago I found this recipe watching Sunny Anderson's cooking show on the Food Network.

I made it for a holiday dinner, and with the kids all being quiet a bit younger, they didn't much care for it.  

I made it again last week, after adapting it to better fit our tastes, and they LOVED it!  I will definitely make this again.

It's great for picnics and barbecues too because you don't have to worry about it sitting out and spoiling because there is no mayo involved, which is a plus for me.

This is a salad that can be served warm or cold.  And it just tastes great!  

I love the combination of the sweet, tangy, and just a little heat in this salad and you will too!

Here’s what you need:
4 pounds baby yukon or white potatoes, washed and cut into 2 inch pieces
6 strips of bacon, diced
3 scallions, chopped
2 garlic cloves, grated on a microplane
3 Tbs. pickled Jalapenos, diced
1/2 tsp. paprika
10 grinds of fresh black pepper
1 Tbs. flour
1/3 cup sugar
1/4 cup apple cider vinegar
1 cup chicken broth


Cube the potatoes and boil for 15 minutes until just fork tender. Drain and set aside.
 

Cook 6 strips of bacon, diced, in a large pan until crispy.  Remove from pan and set aside.
 
In the bacon fat, fry the scallions, jalapenos, garlic, paprika, salt, & pepper until  tender, about 3 minutes.
 
Add 1 Tbs. flour, stir, and cook for 2 minutes.
 
Stir in the chicken broth, apple cider vinegar, & sugar and bring to a simmer.  Simmer for 3 minutes.
 

Add potatoes and bacon to the sauce and stir to coat.  Cook a couple of minutes then serve.
 
After you try this potato salad you won't go back to regular picnic potato salad, trust me!

May be served hot or room temperature.

Serves 8-10

  1. That looks great! Even though I love a mayo-based potato salad, it's sometimes a bit cloying when it's hot. Will make this for my barbecue this weekend (if the rain stops!)
