Coconut Lime Pie

This is probably going to be my favorite pie for the rest of my life!

I love citrus, if you didn't already know, and lime is my favorite!

Which is kind of funny because I always thought lemon was until the last year or so when I decided I'm a lime girl all the way!

And do you know what flavor goes amazingly well with lime????  Coconut!!!

I already had a recipe for Creamy Lime Bars but I wanted a pie recipe I could make too because we all love pie, right?  Nod your head and agree :)


Here's what you need:

Crust
9 sheets of graham crackers, one whole sleeve, crushed
1/8 cup sugar
1/2 cup coconut
6 Tbs. butter, unsalted, melted

Filling
3 Egg yolks
1 can sweetened condensed milk
1/2 cup lime juice, fresh
2 oz. cream cheese, at room temperature
2 Tbs. lime zest

Pre heat oven to 325 degrees.

In a bowl mix the graham cracker crumbs, sugar, & coconut.  Add the melted butter and mix well.
 
Press into a 9 inch pie plate and press up the sides too.
 
Bake the crust for 15 minutes then cool completely.

While the crust is cooking make the filling.
Beat the cream cheese and sweetened condensed milk until creamy.  Add the egg yolks, lime zest and juice and beat until completely combined.
 
Pour into cooked pie crust and bake for 40 minutes at 325 degrees.  The filling will be set when it is completely cooked.
Cool before slicing.  Garnish with real whipping cream and toasted coconut.
Enjoy!
