Chipotle Marinated Steak

Good after my lovelies!   I have an amazing recipe for you today!

Have you been over to see Tieghan at Half Baked Harvest yet?  You SERIOUSLY need to go visit her blog today!  I dare you to try and not come away with at least 3 new recipes to try.  I could happily spend every day over there and still find more recipes to try!

Last week at my link party Tieghan linked up an amazing recipe for Chipotle Steak Burritos, which coincidentally happen to be my daughters very favorite thing at Chipotle, and I knew I had to give them a try.

With last week being STAR testing my kids were in for a treat of home cooking at lunchtime!  Such spoiled kiddos (and friends!) lol.

I immediately printed out the recipe and the next day I was at the store buying up my ingredients to make those burritos; which will come in their own post tomorrow.

For today I have the amazing Chipotle Marinated Steak that my kids absolutely loved and it would make a great dinner all by itself served with some Cilantro Lime Rice and a grilled tortilla.  This steak would also make an amazing Steak salad.

Here's what you need:

1 - 2 Lb. flank steak or steak of your choice
1 chipotle pepper in adobo sauce, minced
1 tsp. adobo sauce
1 Tbs. chili powder
2 tsp. cumin
1 tsp. dried oregano
1/2 tsp. onion powder
1/4 tsp. crushed red pepper flakes
1 tsp. black pepper
1 tsp. kosher salt
3 large garlic cloves, grated on a microplane
1/4 cup canola oil, more can be added if you need more to cover your steak
zest and juice of 1 lime

In a large zip top bag place the steak and set aside.
In a bowl or measuring cup place all the rest of the ingredients and mix well.  Pour half the mixture on each side of the steak.
Zip the bag closed and smush the bag until the marinade covers the whole steak on both sides.
Refrigerate for at least 2 hours and up to overnight.  I marinated mine for about 4 hours.

30 minutes before grilling take the steak out of the fridge and let it come to room temperature because it will cook more evenly if it is not completely cold.

Heat your BBQ to 350 - 375 degrees and place the steak on the grill.
Close the lid and let the steak cook!  Do not fiddle with the meat and don't turn it more than one time.

Depending on how well done you like your meat cook the steak for 7-12 minutes on each side or until a thermometer reads 145 - medium rare, 160 medium, 170 well done.  We eat ours medium-rare and I cooked this steak about 8 minutes per side.
Take the steak off the grill and let it rest (tented with foil if you wish) for 10 minutes before slicing. Don't forget that it will continue to cook a little bit while it rests.

Slice against the grain and very thin for the best possible experience.
Pour any juices from the cutting board (I use a Pampered Chef grooved one) back onto the meat for the best flavor.

This steak can be eaten just as sliced steak or you can dice the slices and eat it in a burrito (recipe coming soon)

Serves 6 - 8, approximately and always depending on how much your guests eat, lol  I feed teenagers that I swear have hollow legs.
