Country Waffles

There's not much better for a weekend breakfast than Country Waffles.  If you've never had waffles from scratch you're in for a treat.
Years ago I used a store bought mix, then I found this recipe and have been making my waffles the same way ever since (I adapted this recipe from a family friend years ago).

They are light as air and when cooked correctly they are crispy on the outside and tender on the inside.

This next weekend give them a try and see if your family loves them as much as we do.  We even eat them for dinner every once in awhile :)

Here's what you need:

2 eggs, I always use large or extra large
2 cups flour
1/2 cup butter, melted
1-3/4 cups milk, any type is fine
1 Tbs. sugar
4 tsp. baking powder
1/2 tsp. salt
1 tsp. vanilla extract

Here is the waffle iron I use.  It is a double sided restaurant style waffle iron and I LOVE IT!  

Preheat your waffle iron.  In a bowl, mix the flour, sugar, salt, and baking powder and set aside.

Beat eggs until fluffy.  Add the milk,
melted butter, and vanilla.
Mix until combined.
Add the premixed dry ingredients and mix until smooth.
When the waffle iron is hot, spray with baking spray and pour the allotted amount into the waffle iron.  Mine takes about 1/2 cup.
Cook according to the directions with your waffle iron.  I flip mine add more batter and flip again.  It's wonderful to have two waffles cooking at the same time :)
Serve with your favorite toppings.  Butter, syrup, powdered sugar, peanut butter, etc. It's all good!

Serves approximately 6 - round waffles (Belgian Waffle size)
