Chipotle Chicken Salad {Healthy}

I have decided it's time to get in shape and start making better choices on what we eat.

I have been going to the gym now for a few months and we have been trying to follow Clean Eating as much as possible.

But let me just say, I'm not on a diet!  Every time I try a diet all I do is waste time and energy with loosing and gaining weight.

This time I want it to be a lifestyle change to healthier choices and keep eating this way for life.

That doesn't mean I won't still be making cookies and cakes.  I just won't be eating them on a daily basis like I used to.

We also cut out most of the bread products (notice I said MOST, not all) and are eating a lot more fruits & veggies with protein.

I can honestly say, I don't miss eating the way I used to and I feel so much better already.

This is one of my new lunch items I've been eating and it is so delicious that you don't even need to go to the restaurant to get a Chipotle Chicken Salad.


Here's what you need:

2-3 cups romaine lettuce, cut up
3 oz. Chipotle Marinated Chicken (or steak), diced
1/4 cup sweet white corn, frozen, thawed or off the cob
1/4 cup red or orange bell pepper, diced
1/4 of an avocado, diced
1 Tbs. light sour cream
3 Tbs. reduced fat cheese, I used Weight Watchers shredded Colby Jack
2 Tbs. Pico de Gallo

I used my Chipotle Marinade to marinate the chicken (with a flank steak) the night before and made 3 breasts so I would have extra for lunch.

Chop up the lettuce and place in a bowl or on a plate.
Add the defrosted corn and bell peppers.
Add the diced chicken.
Add the cheese, avocado, sour cream and Pico de Gallo.
 
This was a delicious, filling lunch just like at one of my favorite restaurants :)  And prepared with the ingredients I used, it was right at 325 calories.

  1. This is a great salad for the hot weather we're having. Love the Chipotle chicken and all of the other toppings. A cold salad with lots of spice - love it!
