Coconut Banana Bread

Do you get tired of the same old banana bread every time you have super ripe bananas? I sure do!

I always buy waaaaay to many bananas because there are weeks when all we do is eat 1-2 bananas all week and then there are those weeks when we tend to consume 2-3 bananas each day so I never know how many to buy.

But it's never been a problem because we love banana bread.

This past week was one of the "1-2 bananas per week" weeks and I had purchased about 10 bananas so we ended up with so many ripe bananas that I needed to try something new.

After my daughter made a traditional banana bread I decided to try adding something that I love and can't believe I've never added before......COCONUT!

This coconut banana bread was so delicious and moist that I'll probably make it every time I have too many ripe bananas from now on.


Here's what you need:

6 Tbs. butter, unsalted and at room temperature
1 cup brown sugar, packed
2 large eggs, at room temperature
1 tsp. vanilla extract
1-1/2 cups mashed bananas 3-4 small or 2-3 med/lg
1-3/4 cups flour
1 tsp. baking soda
1/4 tsp. baking powder
1/2 tsp. kosher salt
1/3 cup heavy cream
1-1/4 cup coconut, I used sweetened but unsweetened is fine too

Preheat the oven to 350 degrees and spray a 10 x 5 loaf pan with cooking spray and set aside.

In a bowl mix the flour, baking soda, baking powder, and salt and set aside.

In the bowl of a stand mixer cream the butter and sugar until fluffy.
 
Add the eggs and vanilla and mix well, scraping down the sides as you go.
 
Add the mashed bananas and mix until incorporated.
 
Add the 1/2 the flour mixture and mix until incorporated.
 
Add the cream and mix well.  
 
Next add the rest of the flour mixture and mix until fully incorporated.
 
Add the coconut and mix until just incorporated.
 
Pour into a prepared loaf pan and bake for 50-65 minutes or until a toothpick inserted into the center comes out clean.
 
Enjoy warm or at room temperature slathered in butter, mmm mmm.
My new favorite way to make banana bread!
