Chipotle Steak Burritos with Cilantro Lime Rice

Remember when I said I would post these delicious Chipotle Steak Burritos?  Well here they are!

These were made using my Chipotle Marinated Steak recipe which came from Tieghan over at Half Baked Harvest and I will forever be in her debt for sharing this amazing recipe.

Chipotle is my daughters favorite restaurant to go to and there were several weeks in a row a few months back where she ate there almost every day.

And every time she goes......she orders a steak burrito!

So if you have a steak burrito eating person in your family too, you need to try this recipe so you can be amazed as well!

Here's what you need:

1 recipe of Chipotle Marinated Steak
1 recipe of Cilantro Lime Rice (see below)
8 wrap sized flour tortillas, or any size you like, lol
1-2 cups Monterey Jack cheese, shredded
sour cream
whole pinto beans, flavored or refried beans work too
salsa
avocado
lime
hot sauce
any other toppings you like on your burritos

Cilantro Lime Rice
2-3 cups cooked white rice, according to package
1/4 cup cilantro, chopped
juice of 1 lime
taste and if it needs more lime juice add it now.

Here's how we put these burritos together.

Heat the tortilla in a dry skillet for a couple of minutes on medium high on each side. Or, you can do like I do and place it directly on the gas burner and try like the dickens not to burn the crap out of your fingers every time, lol.  I do like a little char on mine so this is why I heat them over the fire.  And besides, why wash one more pan if I don't have to.  If you do PLEASE use tongs for turning :)
 
Look, I even used tongs just for you :)
 
Now you can start piling on all the toppings you like.  I started with the rice.
 
Then I added some seasoned whole pinto beans and the diced steak.
 
Next came the cheese (which I used the fine grate on my box grater to make) and some sour cream.
Salsa was added last.  If I'd had avocados I would have added them too but we were out :(
 
To roll a burrito fold over the top and pressing against the tortilla slide it back towards yourself until it can't go any farther.  Fold in the sides and roll until it's closed. Or if you are using a smaller tortilla fold in the sides first then the top and roll. Cut in half and enjoy!  Or, just eat it from one end like we do :)
Serves - quite a few, 6 - 8 adults
