Beef & Bean Enchiritos

You have probably guessed by now that we all LOVE Mexican food around here, well except for that crazy man I'm married to!  But seriously, the kids and I could eat it every day and never get tired.

I have always made my Chicken Enchiladas with green sauce and hadn't yet tried any with red sauce, which I don't understand because when I'm out all I usually order is enchiladas with red sauce.

I used to make beef and bean burritos all the time so I thought why not combine my super easy recipe for those with a little red sauce and make them into Enchiritos, you know that wonderful combo of burrito and enchilada.

Let me tell you, they were AWESOME!  I'll definitely be making these babies again and again!

So without further ado I give you Beef and Bean Enchiritos......

Here's what you need:

1 pound ground beef, I use an 80/20 for the best flavor
1 can refried beans, I like Taco Bell or Rosarita brand
1 pack Taco Bell taco seasoning (I buy this at Winco by the dozen)
1 - 1-1/2 cans red enchilada sauce, I use Target brand or El Paso
1/4 cup water
1/4 cup diced yellow onion
8 - 8" flour tortillas
1 cup Monterey Jack cheese, shredded
1/2 cup Colby Jack for topping, any cheese will work
sour cream, optional
avocado, optional
olives, optional
salsa, optional
lettuce, optional


Preheat oven to 350 degrees.

Pour a couple of tablespoons of the red sauce in the bottom of a 9 x 13 baking dish and set aside.

Heat a medium skillet on medium high and brown the ground beef and onion until no longer pink.
Add the seasoning packet, beans and water.  
 
Stir until everything is completely combined.
Cook for a couple of minutes to let the flavors meld together.

To assemble:
Place 1 Tbs. of sauce on the inside of a flour tortilla.  Then a scoop of the meat mixture.
 
Next, sprinkle some cheese on top of the meat mixture.  Roll up into a tight tube and place in the baking dish.
 
Continue with all the tortillas until the dish is filled.  I got 7 per dish (I doubled the recipe) but probably could have gotten 8 in one if I squeezed them in.
Cover with the remaining sauce and the 1/2 cup Colby Jack or other topping cheese.
  
Bake for 25 minutes or until hot all the way through and the cheese is melted.
 
Serve with any optional toppings you like.  I use sour cream, salsa, olives, and avocados!

Serves 4 - 6 adults

I doubled this recipe and served 6 adults with some left over.  Can be reheated in the microwave.
