Here's what you need:
1 pound ground beef (I use an 80/20 or 85/15 for the most flavor)
1 package Taco Bell taco seasoning (I get mine a Winco)
1/4 cup water
vegetable oil for frying
10 - 6 to 8 inch flour tortillas (soft taco or fajita size)
1 - 16oz. can refried beans
3/4 cup salsa
1-1/2 cups shredded Colby Jack cheese
1/4 cup green onions, diced
Preheat oven to 400 degrees. Line a baking sheet with brown paper bags then paper towels for the tortillas.
Brown ground beef in a skillet over medium high heat until no longer pink. Heat the beans at the same time.
Drain off an excess fat and pour in the taco seasoning and water. Mix until combined well.
Bring to a boil then reduce to a simmer and cook on low for 10 minutes.
Place a cooling rack in a baking sheet and set aside.
Heat about 1/2 - 1 inch of vegetable oil in a large pan over medium high heat until it sizzles when the back of a wooden spoon is inserted into the hot oil.
Fry tortillas, one at a time, for 30 seconds on each side or until brown and crispy then flip and repeat on the other side.
When crispy, remove to the paper bag/towel covered baking sheet to drain, keeping them as flat as possible.
Place a cooling rack onto a baking sheet and place five of the tortillas on top.
Spread 2 - 3 Tablespoonful's of beans on each tortilla then top with 1/4 cup seasoned beef.
Top with the remaining 5 tortillas and spread each with 2 Tbs. of the salsa.
Sprinkle the cheese evenly over the top of all 5 pizza's then sprinkle with the diced green onions. Bake for 8 minutes or until the cheese is all melty.
Serve with sour cream, hot sauce, and any other condiments you would like to. YUM!

Just ran across your site Michelle, love it :) You make all the food I used to eat when I was quite a bit younger and could eat, eat, eat and not gain weight!
