Snickerdoodle Bread

Yesterday while on Pinterest (my new obsession) I found a recipe for Snickerdoodle bread.  Now I don't know anyone who doesn't love snickerdoodles and we certainly do in this house so I gave it a try.  Yum, Yum, Yum, is all I can say.  Thank you to Kristyn at Lil' Luna for such a wonderful recipe (seen here).  I adapted it slightly and  have made this twice already since yesterday and it sure is great first thing in the morning.  I hope you'll give it a try and let me know what you think.  Have a great day.

Here's what you need:

2-1/2 cups flour, unbleached all purpose
1 tsp. baking powder
1/2 tsp. salt
2 tsp. cinnamon
1 cup butter, at room temperature
2 cups sugar
3 eggs, at room temperature
1 tsp. vanilla
3/4 cup sour cream

Topping
1 Tbl. sugar
1/2 tsp. cinnamon

Preheat oven to 350 degrees.  Pre-mix 1 Tbl. sugar and 1/2 tsp. cinnamon in a small bowl and set aside.
In the bowl of a stand mixer or a medium bowl, cream butter, sugar, salt, and cinnamon until fluffy.
 
Add eggs and beat until incorporated.  
  
Add the vanilla and sour cream and mix well.  Next add the premixed flour and baking powder and mix until incorporated, scraping down the sides as you go.
 
I did make this twice and each time I used a different size pan.  I used a pan with four mini loaves in it the first day and today I used two 8 x 4 loaf pans.  Just for convenience and clean up I think I prefer the 8 x 4, but they tasted the same and were wonderful either way.

If using four mini loaf pans, spray with cooking spray and fill each pan evenly; about 2/3 of the way full.
 
Sprinkle with the cinnamon sugar topping and bake for 33-38 minutes or until a toothpick inserted into the center comes out clean.

If using two 8 x 4 loaf pans, spray with cooking spray and fill each pan evenly; about 2/3 of the way full.
Sprinkle with the cinnamon sugar topping and bake for 43 - 48 minutes or until a toothpick inserted into the center comes out clean.

Serves 4 mini loaves or 2  - 8 x 4 loaves
